My cousins were coming to visit and I was looking for an easy prep meal. Roasting meat is hands off cooking at its best. Let the oven do all the work for you! Suzanne, Miriam, and Toni gobbled this up.
Roasted Pork with Sweet potatoes
1T olive oil
1lb pork loin
1t salt
1/2t pepper
1/2c pear fig balsamic, divided
4med sweet potato, cut into 1″ rings
Salting the meat early adds a lot of flavor. This can be done the night before, morning of, or even two hours before. I use about 1 rounded teaspoon for 1 pound of meat. The earlier you salt this the better it will taste. If you are not able to salt early, don’t worry, you’ll still love it, just salt the meat before you it is seared.
Preheat oven to 450.Roasted Pork with Sweet Potato
Add 1T balsamic to roasting pan (or large casserole dish) and smear around the middle, set aside.
Heat a frying pan over medium high heat. When it is hot add the oil then sear the loin on all sides.
Move meat to baking dish, setting down on the balsamic.
Pour 1/4c balsamic over meat, smearing around to cover.
Place the sweet potato rings around the meat then salt and pepper the potatoes.
Cover with foil and bake for 28-32 minutes.
Remove foil, pour remaining balsamic over meat then recover. Let rest for 8-10 minutes, then serve.
There will be drippings in the bottom of the pan, which I spoon over the meat.
